What makes wine organic?

Wine has basically always been an organic product - of course it was possible to have an artificial influence on the vineyard and during vinification. But it was only in the course of the last decade that organic became the focus of many foodstuffs - and interest in organic wine also increased. However, many vintners did not know what to do with the term. They have always grown and vinified their wine organically. Only with new guidelines and regulations did the wineries split into 3 categories. Conventional, Organic Wine and Biodynamic.

Back to the vineyard - organic from the beginning

In order to market their wines with the organic label, winegrowers undertake to work in a sustainable and natural way, from the vineyard to the cellar. The will for original taste, harmony with nature and oenological processes have brought viticulture back to new old ways. Already in the ecosystem vineyard, the natural habitat of diverse flora and fauna is protected, supported and used. Basic fertilizer and plants with pest control effects are sown and nurtured between the vines. An optimal home for beneficial insects of all kinds that protect against pests. The vines are largely left to their own devices, becoming more resistant to disease and climate. The alternative use of sulphur and copper compounds is controversial. These legally compliant sprays disinfect the grapes and help the plant against a variety of diseases. Copper in particular is the only known remedy against downy mildew. In organic farming, these are usually the only remedies; the plants do the rest. This also means a lower average yield compared to conventional wineries, but the reduction in quantity promises full-bodied wine. The vineyard resembles a natural meadow where life springs forth and healthy, bio-active soil is created.

Biodynamic viticulture also helps itself with the cycle thoughts developed by Rudolf Steiner, which understands the entire construct of viticulture as an organism. As far as possible no inputs from outside, as far as possible no influences on the ecosystem. The vines are not helped, only optimal conditions are created in the soil. A well-known example of this are cow horns filled with cow dung, which together with cosmic forces serve as fertilizer and vitalization of the soil.

Off to the cellar - organic wine without additives

In the wine cellar, with conventional vintners a treasure trove of all kinds of additives and processes, with organic vintners thriftiness is the order of the day. Energy- and raw material-intensive procedures are avoided, so the winegrower likes to get into the wine trough and press the grapes by foot. Any leftovers should not be a burden on the environment and are often returned to the natural cycle as fertilizer. The addition of sulfur, to form sulfites for a preservative effect, is also strictly regulated and is reduced to a minimum. Without additives and without elaborate cellar techniques, wines qualify for the label organic.
