Where does the sweetness in sweet wines come from?

What is a sweet red wine?

When we talk about a sweet red wine, rather than dessert wine or mulled wine, we are talking about red and sweet wines with a high residual sugar content. During fermentation, the grape's own sugar (glucose) is converted by the yeast into drinkable ethanol and carbon dioxide. In order for the red wine to retain its sweet note, a process called temperature-regulating fermentation is used. The winemaker lowers the temperature and kills the yeast cells so that the sugar no longer converts to alcohol. This means very sweet red wines usually have a low alcohol content. The principle is the same for sweet white wine . Wine is considered sweet if it has a residual sugar content of at least 45g/l. However, red wines taste less sweet than a white wine with the same residual sugar, as the tannins counteract the sweetness.
