Spirits production

The production of spirituous beverages, i.e. spirits, is still a relatively young process. Although the distillation of pitch has been known since Neolithic times and Aristotle later wrote that wine could also be distilled, it was not until around 1000 AD that the production of high-proof alcohol gained importance. The alchemists of the Middle Ages perfected the process, and in the 15th century various regionally typical products were produced in most European countries. Thus, in the 15th century, Armagnac was created in the south of France, about 100 years later Calvados in Normandy and Cognac in the southwest of France.

It is said to have been the Chevalier de la Croix-Maron who once invented the Cognac . But even before that, Armanac was distilled in Gascony, which is sometimes called the little brother of Cognac. It gets its colour and flavour mainly from being stored in wooden barrels. In contrast to many brandies, which are made from wine, the Italian Grappa is distilled from pomace, i.e. the press residue of the grapes. Spirits from grist and grain: Whisky and Vodka

The former is possibly even older than the spirits from the mainland, but exactly this is not known - just as little whether it originates  from Scotland or Ireland.
