More information about Passiata Terre Siciliane - Stemmari
The Passiata by Stemmari from the Italian wine-growing region IGT Terre Siciliane is a full-bodied, aromatic and full-bodied red wine cuvée made from the Syrah and Nero d'Avola grape varieties.
In the glass, this wine shimmers a deep ruby red with garnet highlights. The fruity bouquet enchants the nose with an expressive aroma of sun-ripened berries - blackberry and raspberry in particular come to the fore and are complemented by juicy cherries. The aromas are rounded off with floral hints of violets and spicy nuances of tobacco and vanilla. With a full body, elegant tannins and an optimal structure, this Italian red wine knows how to impress the palate - supported by a wonderfully velvety texture. The finish has a beautiful length and wonderful fruitiness.
Vinification of the Stemmari Passiata
The Syrah and Nero d'Avola grapes are vinified separately.
The Syrah grapes are harvested at optimum ripeness at the end of September. In the Stemmari wine cellar, the grapes are fermented in stainless steel tanks for 10 to 27 days at a controlled temperature (25 to 27 degrees Celsius). The mash is pumped over regularly. Half of this Syrah then matures for 6 to 8 months in oak barrels - the other half remains in steel tanks.
The Nero d'Avola grapes are harvested in mid-September and then dried for 60 days. After the drying period, the grapes are destemmed, gently pressed and the must fermented for 15 days at a controlled temperature of 25 degrees Celsius. This wine is matured exclusively in stainless steel tanks.
Once both grape varieties have matured, the Stemmari Passiata is blended and rounds off harmoniously for a further 6 months in stainless steel tanks. Only then is this red wine from Sicily bottled.
Dining recommendation for the Passiata Stemmari
This dry red wine from Italy is an excellent accompaniment to all kinds of pasta with spicy meat sauces, fillet of beef with crispy bacon beans or selected sausage and cheese specialties.
